Perfect Paleo Shepherd’s Pie

Ingredients

  • 3 tbsp. grass fed butter
  • 1 large head cauliflower, chopped into small pieces
  • Salt & ground black pepper
  • 1 egg, beaten
  • 3 tbsp. fresh chives, minced
  • 4 ounces cremini mushrooms, chopped
  • 1 medium onion, finely chopped
  • 2 tbsp. tomato paste
  • 1/4 ounce dried porcini mushrooms
  • 3 garlic cloves, minced
  • 1 tsp. fresh thyme, minced (or 1/4 tsp. dried)
  • 1 can beef broth
  • 2 large carrots, chopped
  • 1 1/2 pounds lean grass fed ground beef

Directions

  1. Heat 2 tablespoons of grass fed butter in a large saucepan over medium heat until the butter starts to bubble.  Add the chopped cauliflower and cook for about 10 minutes, stirring occasionally.  Add 1/2 cup of water and 1 teaspoon of salt.  Stir, then cover and cook for an additional 10 minutes.  Remove from heat and let cool for a few minutes.
  2. Add cauliflower to a food processor and blend until smooth. Transfer processed cauliflower to a large bowl, reserving 1/2 cup to add to filling later. Stir in egg and chives.
  3. Heat 1 tablespoon of grass fed butter in a deep cast iron skillet over medium heat until the butter starts to bubble.  Add the cremini mushrooms, onion, 1 teaspoon salt, and 1/4 teaspoon ground black pepper and cook for 7-10 minutes, stirring occasionally.  Next, add the tomato paste, porcini mushrooms, garlic, and thyme.  Stir and cook for about 1 minute.  Add beef broth and carrots, stir until combined.
  4. Add ground beef and bring entire mixture to a simmer.  Cover and cook for 10 minutes.
  5. Remove from heat and stir in reserved cauliflower mixture.  Season to taste.
  6. Heat oven broiler.
  7. Transfer cauliflower/chive mixture to a gallon zip-lock bag.  Cut off one corner and begin piping the mixture onto filling.  Smooth mixture with the back of a spoon and add a decorative pattern with a fork.
  8. Place cast iron skillet on a rimmed baking sheet and place under broiler for 10-15 minutes, until top is browned.  Let stand for 10-15 minutes before serving
